Effect of Temperature and Humidity

A study was carried out to observe the effect of temperature on the shelf life of ripe mangoes. The mangoes were washed properly with tap water and kept at room temperature, covered with jute bag, mustard oil, in the refrigerator and freezer. The organoleptic observation showed that the color, texture and flavor of the frozen samples were moderated acceptable for maximum shelf life. For maximum shelf life the ripe mango should be stored under freezing temperature.
